Boston Baked Beans

A wonderful old-fashioned baked bean flavor. This recipe has served by family for 29 years. and It tastes great served with fresh cornbread or biscuits and honey. you need to allow time for soaking and simmering the beans.

Ingredients

2 cups navy beans

½ pound bacon

1 onion, finely diced

3 tablespoons molasses

2 teaspoons salt

¼ teaspoon ground black pepper

¼ teaspoon dry mustard

½ cup ketchup

1 tablespoon Worcestershire sauce

¼ cup brown sugar

Directions

Step 1
Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.

Step 2
Preheat oven to 325 degrees F (165 degrees C).

Step 3
Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion.

Step 4
In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.

Step 5
Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.

Bourbon and DP Baked Beans

Ingredients

½ cup brown sugar

1 tablespoon ground paprika

1 teaspoon dry mustard

¼ teaspoon cayenne pepper

1 (12 fl oz) can caffeinated pepper-type soda

¾ cup ketchup

¼ cup Worcestershire sauce

8 slices bacon

1 large onion, finely chopped

1 clove garlic, minced

¼ cup bourbon

2 (16 ounce) cans baked beans with pork

Directions

Step 1
Preheat oven to 350 degrees F (175 degrees C).

Step 2
Mix brown sugar, paprika, mustard, and cayenne pepper together in a bowl. Whisk in pepper soda, ketchup, and Worcestershire sauce until brown sugar is dissolved.

Step 3
Cut 4 slices of bacon into small strips. Cook and stir in a large Dutch oven over medium heat until almost crispy, 3 to 5 minutes. Transfer to a bowl, reserving bacon grease.

Step 4
Stir onion into the bacon grease in the Dutch oven; cook and stir until soft, 3 to 5 minutes. Add garlic; cook and stir for 1 minute. Pour in bourbon, stirring to scrape up browned bits off the bottom with a wooden spoon. Stir bacon strips back in.

Step 5
Pour brown sugar mixture and baked beans into the Dutch oven. Simmer until beans are heated through, about 15 minutes. Arrange remaining 4 slices of bacon on top of the beans.

Bake in the preheated oven, covered, until beans are bubbly and sauce is syrupy, about 3 hours.

Quick Tuna Salad

This tuna salad is great when you are in a hurry; very quick and easy.

Ingredients

1 (7 ounce) can solid white tuna packed in water, drained

¼ cup creamy salad dressing (such as Miracle Whip™)

1 tablespoon sweet pickle relish, or to taste

Directions

Mash tuna together with salad dressing and relish in a small bowl with a fork.

Air Fryer Coconut Shrimp

Coconut shrimp come out great in the air fryer, and are served with a simple spicy honey-lime dip.

Ingredients

½ cup all-purpose flour

1 ½ teaspoons ground black pepper

2 large eggs

⅔ cup unsweetened flaked coconut

⅓ cup panko bread crumbs

12 ounces uncooked medium shrimp, peeled and deveined
cooking spray

½ teaspoon kosher salt, divided

¼ cup honey

¼ cup lime juice

1 serrano chile, thinly sliced

2 teaspoons chopped fresh cilantro

Step 1
Stir together flour and pepper in shallow dish. Lightly beat eggs in a second shallow dish. Stir together coconut and panko in a third shallow dish. Hold each shrimp by the tail, dredge in flour mixture, and shake off excess. Then dip floured shrimp in egg, and allow any excess to drip off. Finally, dredge in coconut mixture, pressing to adhere. Place on a plate. Coat shrimp well with cooking spray.

Step 2
Preheat air fryer to 400 degrees F (200 degrees C). Place 1/2 the shrimp in the air fryer and cook about 3 minutes. Turn shrimp over and continue cooking until golden, about 3 minutes more. Season with 1/4 teaspoon salt. Repeat with remaining shrimp.

Step 3
Meanwhile, whisk together honey, lime juice, and serrano chile in small bowl for the dip.

Step 4
Sprinkle fried shrimp with cilantro and serve with dip.
